
Mocha Cheesecake!
A bake-worthy favourite from Abhar's home café recipe box.

Method

Preheat oven to 350F (180C) and cover the bottom of a 9inch springform pan with 2-3 layers of aluminum foil.

Ground the Oreos into a food processor or in a large freezer bag and crush them with a rolling pin.

Transfer into a small bowl and mix in the melted butter.

Spread an even layer in your pan and bake for 10-11 minutes. Set aside to cool.

For the cheesecake: heat your heavy cream over medium heat and take off the stove just before it boils. While the cream is heating, chop your chocolate into rough pieces and transfer to a heatproof bowl.

Pour 1/2 cup of your heated heavy cream over the chocolate and mix until you have a smooth ganache. If the chocolate isn’t melted completely, heat in the microwave in intervals of 15 seconds.

Add the instant coffee into the other 1/2 cup of heavy cream and mix. Set aside.

In a stand mixing bowl with a paddle attachment, beat your cream cheese on low speed for 1-2 minutes or until smooth.

Add your sugar, vanilla and cornstarch. Beat on medium speed until combined. Scrape down the sides of the bowl and the paddle.

Beat eggs one at a time, scraping down the sides between the eggs, until no yolk or white streaks remain. Take off the stand mixer and mix with a whisk until you have a smooth batter.

Place your springform pan in a large roasting pan. Add around 1 inch hot water into the roasting pan.

Ladle half the batter into your ganache and mix. Pour your coffee/cream mixture into the other half.

Spread an even layer of your chocolate cream cheese over the crust. Carefully pour the coffee cream cheese batter over the chocolate.

Bake for 45-50 minutes or until it’s set and there’s a jiggle in the center when you tap the pan. Turn the oven off and let the cheesecake sit in the oven till it’s at room temperature.

Chill in the refrigerator for at least 6 hours before serving.
