
Brown Butter Chocolate Chip Cookies
Large, brown-butter chocolate chip cookies with dark brown sugar and chopped semi-sweet chocolate.

Line a cookie sheet with parchment paper and set aside.

Heat the butter in a small saucepan until the milk solids separate and toast. When it is amber-brown and nutty-smelling, transfer it to a heatproof mixing bowl and cool for 25 minutes.

Add both sugars to the browned butter and whisk until combined.

Whisk in the egg and vanilla paste.

Fold in the flour, baking soda, baking powder, and salt until almost combined.

Add the chopped chocolate and fold until combined.

Using a large ice-cream scoop, portion 6–7 cookies onto the prepared sheet. Chill for at least 5 hours.

Preheat the oven to 375°F (190°C). Bake for 12–14 minutes.

Cool for 10 minutes before eating.
